Limited to just 20 guests, this intimate evening is a rare opportunity to experience a curated whisky-paired menu that celebrates storytelling, craftsmanship, and flavour in equal measure.

 

For $195pp, guests will be treated to a thoughtfully designed shared-style feast, expertly paired with a cocktail on arrival and four 20ml whisky tastings.

About That Boutique-y Whisky Company

 

Since launching in 2012, That Boutique-y Whisky Company has flipped traditional whisky branding on its head. Known for their striking, graphic novel-inspired labels (think dinosaurs fighting sharks), they bottle small-batch single malts, grains, and blends from some of the world’s most iconic - and obscure - distilleries.

About Highwayman

 

Highwayman is the passion project of Dan Woolley, one of Australia’s most recognised whisky personalities. After years of traveling across the world as a whisky ambassador — learning from legendary distilleries in Scotland, Kentucky, Tasmania and Japan — Dan set out to create something of his own. In 2016, he began collecting casks from his favourite distilleries and laying down spirit, eventually launching Highwayman in Byron Bay in 2020.
